2 large whole wheat or corn tortillas
1 cup shredded mild cheddar cheese
1/2 cup cooked and mashed sweet potatoes
1/2 cup finely grated zucchini
1/4 cup finely chopped bell peppers (any color)
1 tablespoon olive oil
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
Optional toppings: salsa, guacamole, or sour cream


Prepare Vegetables:
In a mixing bowl, combine mashed sweet potatoes, grated zucchini, and chopped bell peppers.
Add ground cumin, paprika, salt, and pepper. Mix well.
